Bacon Maple Roasted Tomatoes
Smoky yet sweet semi-dried tomatoes.

Bacon Barrel Aged Maple Syrup

Preheat oven to 250F degrees.
Wash and dry tomatoes. Cut in half.
Arrange tomatoes, cut side up, on a lined baking sheet or glass baking dish.
In a small bowl, whisk together 1 tbsp bacon maple syrup, olive oil, thyme, garlic, salt, and pepper. Drizzle mixture over arranged tomatoes.
Place uncovered baking sheet with tomatoes in oven to bake for 2 hours.
Check at the 2 hour mark. Tomatoes will be ready when they are half-dried. If not quite done, cook for up to 1 more hour, checking every 30 minutes.
Once tomatoes appear half-dried, drizzle remaining bacon maple syrup over the top. Return to oven for 15 minutes.
Substitute bourbon or whiskey maple syrup for the bacon barrel aged maple syrup.
Try different herbs instead of the thyme like basil. Fresh herbs will give these tomatoes an even bigger burst of flavor!
The toaster oven dried the tomatoes out quicker than the traditional oven. This may require you to adjust your time closer to the 3 hour mark when roasting these.
